Interview with Jessica Seifried
Tell us about yourself and why you chose to study Nutritional and Nutraceutical Sciences at the University of Guelph?
I grew up playing softball leading an active lifestyle and have always loved food! Towards the end of high school, I was exploring dietetics and was convinced that’s what I wanted to do working alongside athletes. However, the acceptance process changed my trajectory when I didn’t get accepted into Applied Human Nutrition. I knew I wanted to go to Guelph and thought Nutritional & Nutraceutical Sciences would provide some overlap. I told myself that I would apply to transfer if I didn’t love it. First and second year were very heavy and broad, but third year is where I found my passion. So much so, that I came back to continue my studies for my masters!
What did you like most about your program? Is there anything in particular about the courses or professors that stands out to you?
I personally wouldn’t have known about Regulatory Affairs if it wasn’t for guest speakers in the field. In Applied NANS with Dr. Bettger I got to explore it further and develop an appreciation for what goes into product development from marketing, researching, formulation, labelling and shelf presence. I also will forever be grateful for the network of amazing students that Dr. Bettger has created. Students who are willing to pay it forward. Landing a career is all about the connections!
Did you do co-op? If yes, tell us a bit about your placement and your experience.
My undergraduate program did not have co-op, but my master's had an internship. I conducted informational interviews with Dr. Bettger’s amazing network and through that I came across a position at Iovate which continued on as a permanent position. The internship allowed me to learn how to navigate regulatory frameworks and apply them through ingredient approvals to label review. I also got to explore the international environment.
Where are you currently working and what is your role?
I am now at Wonderbrands as a Regulatory Affairs Specialist. I just celebrated my one-year work anniversary which wouldn’t have happened if I did not push myself to make the leap not knowing what would come of it. My contract position turned into permanent eight months in. You never know what is out there and what will happen!
How did your degree and time at the University of Guelph help get you to where you are today? How do the skills and education you gained help with your current work?
Again, I would not be where I am today without Bettger’s push to build connection. Regulations are not something that are necessarily memorized, but it’s about knowing where to look and ask. I had a great foundation of navigating labels and government websites coming out my program.
What advice would you give someone considering the Nutritional and Nutraceutical Sciences program or applying to the University of Guelph?
My advice to those even slightly considering applying to Nutritional and Nutraceutical Sciences, would be to apply! There are so many different career paths afterwards and people are transitioning to a more holistic approach which is exactly what the program encompasses.

Where was your favourite place to eat on campus and what was your go-to food order?
My favourite place to eat on campus was Creelman! Lots of variety always, from burritos, to pasta, to home cooked meals.
What was your pre-exam ritual?
My pre-exam ritual was to read through all the lecture slides a few weeks before and create condensed summarized notes that made the material feel not as overwhelming. When I felt confident with the material, I would form study groups where we could discuss gaps and quiz each other. I always made sure I got a good night’s sleep before too, if you’re tired, your brain just doesn't function the same.
